A Day At Service With Barlie

On what seems to be a quiet corner in the old Naval area of Copenhagen you’ll find Bottega Barlie. The terrace filled with plants and greens marks the entrance to one of our absolute favorites places in the city. 
A classic, somewhat modest setting but with huge attention to detail and an atmosphere flooding the surrounding streets. Laid back and lively with no pre-determined rules. 

“When I entered the doors at Bottega Barlie the very first time I remember how electric the atmosphere was in the rather tiny room. 
The naked walls in contrast to the opulent flowers, the smell of freshly prepared foods, the sounds of laughter and wine glasses that meet.
The guests, an eclectic mix of people impossible to decode on the spot, and the staff - it all felt like an organism in vibrant balance. A place with real purpose. 
 
We enjoyed a bottle of chilled Pouilly-Fumé that night, maybe several, and walking home late at night I realized I had been experiencing a unique approach to hosting - uncomplicated presence and sincere values.

Bottega Barlie was founded in 2019 by Tobias, Daniel, Oliver, August & Alfred. 
Dreaming of creating a restaurant with a curious and intimate energy blending all sorts of fragments into a new local culture. In the beginning the small group of friends threw themselves into eighteen hour shifts covering everything from buying groceries, preparing breakfast for the early risers, cleaning after lunch, cooking up dinner and atmosphere, serving wine and gently saying good-bye to all their guests at Midnight with a smile - feeling connected to their audience and slowly seeing their vision unfold every day. 

Chef Julian Rodriguez who later joined the team after having gained valuable experience from NOMA, wanted to create a menu of fresh, directional cusine enhancing few, but high quality components merging local produce and South American notes. A dance of temper and flavors paired with an enthusiastic and exciting wine card containing both classical- and natural wines but always with a democratic mind set behind. An approach that is consistent and transfers from food to air.

"Our guests are like different flowers all with different needs, preferences, backgrounds and interests. It is our mission every day to embrace them and hopefully we unconsciously encourage them to interact with each other naturally. Discovering small but meaningful experiences.  
This goes into our choices for the room as well. We wanted to avoid all sorts of conform scenography but rather letting the room communicate the past and include the many years of different usage in the atmosphere. Welcoming the ghosts of the building to the table and invite them to participate in a new adventure so to say.
